first edition. Rosetti was scalco to Lucrezia d'Este, duchess of Urbino, to whom he dedicated this work. The three books contain rules for the maestro della casa, a list of monthly menus for banquets, and a list of recipes arranged by ingredient. It includes the earliest known recipe for tortelli alla zucca.
